Fleur de Sel from our CASC partner, Pacific Flake Harvestry in Samoa, CA.
"Flower of Salt" in French, fleur de sel is an extremely delicate and mildly crunchy salt created from flake salt production. When flake salt is removed from heated pans, fleur de sel gently falls to the bottom. Using a very specific method of extraction, the crystals are carefully placed on trays to dry in the sun.
The result is a salt that is highly coveted for its tiny salt explosions in your mouth - a tiny pop from the crunch of the salt, and then... poof! it's gone.
You would use this salt on your finest dishes.
